The Best Butternut Squash Soup

1 onion coarsely chopped

1 large or two smaller butternut squash peeled and cut into large chunks

1 qt. veggie or chicken broth

2 tsp. coconut oil

salt and black pepper to taste

1 can coconut milk 

Add a bit of fresh ginger and fresh turmeric and other seasonings if desired. 


Saute onion in oil for 5 min.

Add squash and stir

Add broth and salt and pepper 

Bring to a boil, lower to simmer, and simmer covered for 20 minutes. 

Use immersion blender to blend. 

Add coconut milk and stir, season and serve.
