Thai Chicken Herb Salad

1 lb ground chicken breast chopped into small squares

2 tbsp coconut oil

4 minced garlic cloves

2 shallots chopped very finely

1 tbsp grated ginger or more to taste

2 tbsp fresh lemon zest

1/8-1/4 tsp red chili pepper flakes (or less to taste)


1 ½ tbsp fish sauce

½ lime juice taste and possibly more before serving

2 tbsp lime zest

1 tbsp coconut aminos or braggs aminos

Pinch of sea salt


Handful of chopped cilantro and mint leaves

1 spring onion chopped

Heat the oil over high heat, when hot add garlic, shallots, ginger, lemon zest and chili pepper flakes. Add a small pinch of salt and stir fry until golden brown. Add chicken. Stir fry until the meat is cooked through. Season with a small pinch of salt. Turn off the heat and add sauce ingredients. Stir together and add in toppings. Mix everything well and taste to see if more lime juice is needed.
