Sweet Potato Tacos

I’m just going to admit it right now. I am a taco fiend. I love tacos. I have shirts about tacos, I have cookbooks that are only about tacos, I stalk taco shacks, and I’m pretty much obsessed.

1 sweet potato

¼ cup black beans (cooked or canned)

2 oz guacamole (or ½ avocado sliced)

Hot sauce (optional)
1 green onion, sliced

2 corn tortillas (you can also use the cassava ones, or you can use lettuce)

¼ cup corn (if your eating corn)

Lime juice


You can bake, boil, steam or microwave your sweet potato. I like to slice mine in long slices and season them with Cajun seasoning and roast in the oven, this shape fits well on a taco. Place the sweet potato in the lettuce or tortilla’s add black beans on top, add the avocado and other toppings. You can get creative with your toppings. Make up a tangy red cabbage slaw, or a creamy avocado-yogurt lime sauce, Aioli, cilantro, diced tomatoes, salsa verdes, queso fresco, or really switch it up and add a little nutmeg and cinnamon, add chicken, steak, shrimp, mahi mahi… whatever gets you excited.
