Sweet Potato Croutons

2 cups chopped sweet potatoes cut into about 1/4 inch cubes

2 teaspoons avocado, coconut oil or other high smoke point healthy oil

sea salt to taste


Preheat oven to 450°

Place the sweet potatoes in a large ziplock bag add the oil and shake to coat the sweet potato chunks in oil and  then sprinkle with sea salt. You can use other seasonings if you like as well. I like greek seasoning on mine sometimes and sometimes Italian seasoning.

Line a baking sheet with parchment paper  and roast for 20 minutes, or until sweet potato chunks are brown on the edges and have a little crunch on the outside.

Stir potato chunks to turn once mid-way through the baking time.

Serve immediately. These are meant to be eaten right away. You can make them in advance, but they will not stay crunchy, they will get soft.

*Consider adding other flavors like cumin, cinnamon, garlic or maple syrup!
