Super Easy Elimination Diet Beans and Rice

¼ cup brown rice uncooked

¼ cup black beans cooked or canned (I prefer dried beans soaked overnight with kombu seaweed and cooked in an instapot to reduce lectins)

1 tomato diced small (I use 1/4 container of grape tomatoes which I cut into 8ths by slicing lengthways twice and then cutting that in half… they hold together better and have more flavor sometimes)

2 green onions sliced

Fresh cilantro

¼ cup corn (if you can have corn, if not its optional)

¼ cup salsa (regular or mango or peach… whichever)

Fresh lime juice

Hot sauce if you desire

Combine rice in ½ cup water or broth, cover and bring to a boil. Once boiling, reduce to low and

simmer until fluffy and cooked, about 45 minutes. Once cooked, mix with beans, tomato, green

onions, cilantro (if using) and corn. Top with salsa, hot sauce and lime juice, desired. You can also make the rice ahead of time when you make the beans. 

Note: if you are doing the elimination diet you will want to eliminate corn and possibly the tomatoes and salsa if you are eliminating nightshades. 

Also Note… this serves 1 you can increase proportionately to how much you want to make.
