Avocado Toast

When I’m in a hurry and need something quick and easy this is a favorite of mine. I have used a nice crusty farmers bread and Ezekiel bread… but my favorite is Raw Onion Bread from the dehydrator.

Avocados are incredibly nutritious containing more potassium than a banana. They are high in fiber and heart healthy monosaturated fatty acids. Studies show that avocados can reduce total cholesterol, triglycerides, LDL and raise HDL levels. Because of their high fat content, they increase absorbability of some nutrients. They also they increase antioxidant absorption. 

They contain the antioxidant carotenoids, lutein and zeaxanthin, that are important for eye health.  Data from the NHANES survey with 17,567 participants found that those consuming avocados were much healthier than those who did not. The benefits go on and on and research is pointing to more and more benefits of this delicious fruit. Yes… it’s a fruit. 

Avocado Toast


1 Avocado

1 TBS Minced onion

1 TSP Minced garlic

1 tsp Cilantro chopped

Pomegranate seeds

High quality Olive oil

Himalayan Sea Salt


Roughly dice the avocado, add onion, garlic, grape tomato and cilantro, with a fork combine mashing slightly. If using bread toast your bread to a golden crunchiness. Raw Onion bread does not require toasting. Place the avocado mixture on top of the bread and spread and mash with fork slightly. Add a scattering of pomegranate seeds on top, drizzle with olive oil and sprinkle with Himalayan salt to your taste. Enjoy!

Egg

Smoked Salmon

Feta Cheese

Micro greens or sprouts

Toasted seeds


Note: If you're Keto or in a hurry, just mash the avocado, top with pomegranate seeds, olive oil and salt, and enjoy!
